Recipe of the month – Smoked Salmon Potato Cakes

Ingredients –
1 pound baked potatoes, cooked, peeled and grated (a food mill works best)
4 ounces diced smoked salmon
1 tablespoon chopped, fresh chives
½ teaspoon sea salt
¼ teaspoon freshly ground pepper
1 chopped scallion
a bit of olive oil

Combine all ingredients. Form into 2 ounce size patties and brown on an oiled griddle.
Finish in low-heat oven till heated through. Garnish with chopped green onions
Serves 10
